These rice and bean burgers were super yummy, fast and easy to make. Plus they were a hit with everyone. Bonus. Don’t let the ingredient list throw you off, they taste good for rice and beans.
I could eat egg over asparagus all week long. It made the perfect June meal followed by strawberry shortcake made with local strawberries. That entire meal was all bought locally and tasted SO very good. It makes all the waiting for the berries and the fresh greens worth it.
I haven’t been that adventurous in the kitchen as late, there’s been some different transitions around here with boarders moving out, guests, and new work schedule adjustments. When all the transitions happen, it’s best to just hunker down and do what is known and familiar. And drink tea.
I’ve added iced coffee back into my drink routine with the hot summer days that we’ve been having, all five of them. I know that there are lots of great recipes out there but honestly I just add milk to my leftover morning coffee, add a couple of ice cubes and a splash of Khalua (if I’m feeling indulgent). Yum. My favorite drink to buy this summer is a lime Italian soda, so refreshing!
I read Matilda by Roald Dahl in an evening this week. I laughed almost the entire time and decided to read more books by Roald Dahl.
I also got more Baby Lit books from the library for my littles. I find them amusing and delightful. I think I like them more then my girls.
I’m trying to be intentional with my time, closing the laptop in the evenings and on the weekends. Not taking my phone out when we’re out and about. Reading a book instead of reading a screen when I have a few spare moments. Its been a fun challenge. And I see the hilarious irony of beginning this paragraph talking about less screen and then delving into all sorts of screen stuff.
This post by Modern Mrs Darcy really resonated with me and I appreciated her honesty as an introvert and a HSP (highly sensitive person). I have both of those traits and found myself nodding myself throughout the post.
And this post by The Tiny Twig helped me take a deep breath and know that this intense season of parenting littles won’t last forever.
I kind of wanted to dive through the screen and into this restaurant my dear friend wrote about. I love finding good places to eat and sharing them with my people is a treat.
I am really anticipating this book by one of the first bloggers I read. I can relate to bits of her story- life overseas, depression, cross-culture stuff (although our stint was a mere 6 months) and a love of travel. She currently lives in the Pacific Northwest, just a few hours south of the province I called home for most of my life.
